sometimes a little bit odd to figure out, but when you do they are quite worth it! Of course, the easiest solution to figuring out many vegetables, and receive their health benefits without even putting in much thought is to simply juice them!

Beet juice is great for your health! Just don’t freak out when it dies your urine the same color as itself, a reddish purple! Many early red dyes were developed from beet juice after all! Beet juice is like a boost of vitamins and minerals and having it on hand is a great idea!

Speaking of that signature red color! Beets have Betalain!

Betalains are a plant pigment that is being classified as a new order of antioxidant! The name Betalain actually comes from the latin word for beet as that was the first place that they were extracted from to be tested! Many of beets health benefits specifically come from Betalains within beets!

Specifically betanin and vulgaxanthin are two betalains that have anti-inflammatory and detoxification properties! However, many betalains become damaged and deactivated when they are cooked, therefore in order to receive all the benefits that beets have to offer, do consume the raw beet juice!

Betanin has actually been used to treat depression, and beet juice also contains tryptophan which is known to give one a relaxed state of mind (not just a sleepiness after a thanksgiving meal!)!
